5 Camping Meals to Start Before You Go

Tinfoil Mexican Dinner

If you're looking to try something new for a camping meal, this is it. A little Mexican flare at the campsite is not only delicious, but a welcomed change from the usual dogs and burgers.

- Make ahead: Mexican tinfoil packets
- Fireside: Cook packets

At home: Rip off 5" x 5" pieces of tin foil. Place raw bell peppers and onions in packets—be sure to slice them lengthwise, fajita style. Add in corn, salsa, black beans and thinly sliced chicken.  Season as necessary, though the salsa should provide plenty of flavor. Close your packets and pack them away.

At the campsite: Place packets over the fire and let cook for 8 to 10 minutes. Open, top with tortilla chips and enjoy.
