Lemon Chicken Rub
Ingredients:
10 lemon drop hard candies
1/2 tsp. each ginger and cinnamon
1/2 tsp. each salt and white pepper
1 fresh lemon
Olive oil
Fold the lemon drops in a clean dishtowel and use a hammer to mash them to powder. Mix your lemon powder with ginger, cinnamon, salt and pepper. Just before using the rub, zest the fresh lemon, chop it fine and mix this in with the powder, as well. Slice the lemon thin and remove any seeds.
Rub the spice mixture thoroughly under the skin of a whole chicken. To roast the chicken, place it on a rack, brush it with olive oil, and place your lemon slices on top of.

Fire Engine Red Chicken Rub
Harvested in islands of the Indian Ocean, rose peppercorns are available at gourmet shops. Note: don't confuse this seasoning with hot red pepper such as cayenne. Not a fan? Substitute black or mixed peppercorns to create a similar flavor. Smoked sea salt is also available from specialty food sources, and can be a suitable substitute.
Ingredients:
1/4 cup cinnamon red hots candy, crushed
1 tbsp. sweet Hungarian paprika
1 tbsp. smoked paprika
1 tbsp. each smoked sea salt and freshly ground rose peppercorns
Mix everything together and rub it carefully into the skin.

French Kiss
In the South of France, every cook has his or her own recipe for Herbes de Provence. Here's one chicken rub that works especially well.
Ingredients:
1 tbsp. dried culinary lavender, crumbled fine
3 tbsp. each dried marjoram, thyme, savory spice blend
1 tsp. each dried basil, sage, rosemary
Combine all the herbs and keep them in a cool, dry place while you slip bits of cold butter under the chicken skin. Massage the butter into the bird, melting it with the heat of your hands. Rub dry herbs over the outside of the skin.
Best for: roasted whole chickens
