Apple and Cinnamon Rice Cakes
The last time we whipped up a batch of these, they disappeared in a hurry. These rice cakes are great for vegetarians or anyone who just wants a little variety in their rice cake arsenal. The flavor is reminiscent of apple pie and apple-cinnamon oatmeal.
Recipe:
3 cups uncooked sushi rice
4 1/2 cups water
1 apple, peeled and minced
2 tablespoons raw sugar
Juice of one lemon (roughly three tablespoons)
Top with: 2 tablespoons raw sugar, 2 teaspoons ground cinnamon, and 1 teaspoon coarse salt
Directions:
1. Combine rice, water and a dash of salt in a rice cooker and let cook.
2. When the rice is finished cooking, transfer it to a large bowl and add the apple, sugar and lemon juice.
3. Once all of the ingredients are incorporated, adjust seasoning to taste. Evenly spread the mixture into a 9x12" baking pan and top with a sprinkling of cinnamon sugar and coarse salt.
