Quicksilver Camp Cooking: 3 Tin Foil Meal Ideas

Cold Stove Rice Pilaf

This side-dish recipe, for RVers with a pressure cooker on board, is sure to impress and will save on fuel and dishwashing.

Ingredients

  • 1 cup long-grain white rice
  • 1/2 tsp. each salt, crumbled thyme, freshly ground pepper
  • 1 tsp. dried parsley flakes
  • 1 square of butter (optional)
  • 1 cup water

Directions

Form a cantaloupe-size bowl out of non-stick foil. Put rice and seasonings inside with a square of butter and one cup of water. Put 2 to 3 inches of water in the cooker and float the foil bowl inside. The rice gets additional moisture from the steam, so you don't need to use the pressure cooker for nearly as long, saving on fuel.

Raise the cooker to full pressure for one minute, then set it aside until pressure returns to normal. Take the foil bowl out, and carefully place it in a plastic or ceramic bowl for easier handling. Stir the rice and spoon it out of the foil for your guests. In the end, you have a delicious side dish, while the pressure cooker and bowl stay clean. This tin foil recipe makes four 1/2-cup servings.

Sausage and Egg Breakfast

Ingredients

  • 4 cooked sausage patties
  • 2 cups thawed hash brown potatoes
  • 4 eggs
  • Cooking spray

Directions

Form your tin foil into four shallow, grapefruit-size cups. Spray them with non-stick cooking spray and place all four in a clean, dry tall skillet or pot. Add a fully cooked sausage patty, and top it with 1/2 -cup thawed hashed brown potatoes. Use the back of a spoon to make a depression in the potatoes and break an egg on top. Cover the skillet and cook over a medium fire until the eggs are poached as desired. While the breakfast is cooking, toast a piece of bread over the fire. Eat right from the foil, dipping the yolk with your toast. This makes four full meals.
